The Cheese Party
The
old tradition of Tafí del Valle is represented by the excellent
cheeses both from the dairy production of estancias (cattle ranch) of the area
and also home-made.
Thanks to the appropriate weather and the accurate
curing period, delicious criollo cheeses are produced, either hard
or semi-hard, with a special flavor. While they are comparable to the best
cheeses in the world, their production is still carried out on a non-industrialized
scale and preserved as a national asset.
This
party has become the most important event inTafí, being held in February
every year, and it gathers a great amount of tourists and villagers. It is an
occasion which is also used for the development of popular expressions typical
of the valley and of its inhabitants, such as music, handicrafts
and criollo dances, rodeo skills with enlazadores (lassoers),
pialadores (hobblers) and tamers, which gives this event a dimension
that allows visitors a glimpse of the tradition of Tafí del Valle.
